I wanted to offer a substantial sandwich to match the chicken soup and something quite different from my normal tea sandwiches. The mix of cheese, ham, apple and pickle is basically a ploughman’s lunch in a sandwich. I am still searching for the perfect bread, so let me know if you find something that works for you.
- Wholemeal Bread
- Irish Kerrygold cheddar, sliced (Costco!)
- sliced ham from the deli
- apples, sliced no need to peel
- crispy lettuce – not convinced this is necessary
- mixed raisin chutney (home made – see recipe below, but look for Branston Pickle or similar in the stores)
Butter two slices of bread and spread one side with chutney. Fill with the slices of the other ingredients. We added some crisps or chips as you would say here. Yum
So here is where I make my confession, cannot quite remember how I made the chutney. I love the bags of large raisins that carry in Trader Joe’s so I am sure they went in and I suspect it is something like this
- 2 cups sugar
- 1 cup distilled white vinegar
- one medium onion, diced
- 6-7 cups mixed raisin, golden raisins etc
- maybe throw in an apple and pear, diced?
- olive oil
Heat oil in a dutch oven or saucepan, add onions and cook for 5-10 minutes until transparent but not browned
Add vinegar and sugar and cook gently until sugar is dissolved. Add fruit and cook slowly for 40-50 minutes until thick. Pour into sterilized jars and cover. This should keep unopened for months and weeks in the fridge once started.
